おいしい魚(さかな)を食(た)べるなら、やはり旬(しゅん)の時期(じき)に食(た)べるのが一番(いちばん)です。それは、魚(さかな)の脂(あぶら)乗(の)りや身(み)の締(し)まりは旬(しゅん)によって変(か)わるからです。それでは、一般的(いっぱんてき)に旬(しゅん)と言(い)われる時期(じき)を紹介(しょうかい)します。


March-May - spring fish

    春(はる)が旬(しゅん)の魚(さかな)は、程(ほど)よく脂(あぶら)がのっています。それは、冬(ふゆ)の寒(さむ)さから身(み)を守(まも)るために体(からだ)の中(なか)に蓄(たくわ)えた脂肪(しぼう)が残(のこ)っているためです。春(はる)こそ楽(たの)しみたい魚(さかな)は、マダイ と カツオ です。春(はる)の マダイ は、ホルモン の影響(えいきょう)で桜(さくら)色(しょく)に染(そ)まり、「桜(さくら)鯛(たい)」と呼(よ)ばれ、季節(きせつ)を楽(たの)しめる魚(さかな)となります。カツオ について、春(はる)の終(お)わり、夏(なつ)の始(はじ)める頃(ごろ)のカツオ は、「初(はつ)カツオ」と言(い)い、赤(あか)身(み)のうま味(あじ)楽(たの)しめます。




6月(がつ)~8月(がつ)・夏(なつ)の魚(さかな)

       夏(なつ)の魚(さかな)は、脂(あぶら)乗(の)り少(すく)ないですが、高(たか)タンパク質(しつ)、低(てい)カロリー の白身魚(しろみざかな)が多(おお)いです。特(とく)に、夏(なつ)に脂(あぶら)がのる ウナギ や アナゴ などは、ビタミン などの栄養分(えいようぶん)もたくさん持(も)っていて、夏バテ(なつばて)予防(よぼう)になります。



9月(がつ)~11月(がつ)・秋(あき)の魚(さかな)

    秋(あき)の魚(さかな)は脂(あぶら)がのって、コク のある青(あお)魚(さかな)が多(おお)いです。秋(あき)に旬(しゅん)を迎(むか)える魚(さかな)は産卵(さんらん)のために栄養分(えいようぶん)を蓄(たくわ)えており、これが旨味(うまみ)となってより美味(おい)しくなるのです。特(とく)に、青(あお)魚(さかな)は魚(さかな)脂(あぶら)に「DHA」や「EPA」と体(からだ)に良(よ)い栄養素(えいようそ)を豊富(ほうふ)に含(ふく)みます。さらに、この時期(じき)の カツオ は、「戻(もど)りカツオ」と呼(よ)ばれ、「初(はつ)カツオ」と比(くら)べ、食(しょく)感(かん)が柔(やわ)らかく、脂(あぶら)乗(の)りが良(よ)いです。



12~2月(がつ)・冬(ふゆ)の魚(さかな)

    冬(ふゆ)の魚(さかな)は寒(さむ)さが厳(きび)しくなるにつれて、脂(あぶら)も味(あじ)ものり、身(み)が締(し)まって旨味(うまみ)が増(ま)してきます。「寒(かん)」を つけて呼(よ)ばれる魚(さかな)は寒(さむ)さが増(ま)す頃(ごろ)に身(み)が締(し)まりさらに美味(おい)しさが増(ま)します。特(とく)に、(寒(かん))ブリ、(寒(かん))ボラ、(寒(かん))ビラメ、(寒(かん))ブナ、(寒(かん))ガキ、(寒(かん))シジミ などがよく知(し)られています。


年(ねん)に 2回(かい)旬(しゅん)がある魚(さかな)

    カツオ、ハモ と ウナギ のように年(ねん)に 2回(かい)旬(じゅん)のある魚(さかな)もいます。

いい魚(さかな)を見(み)つけたら、手軽(てがる)に フライパン でおいしく焼(や)いてしまいしょう!



How to grill fish

Ingredients.

-Salted salmon       1 slice

-About ½ teaspoon of salad oil


Preparation.

It is recommended that raw salmon is not used as it is, but that the odour is removed before cooking.

The way to remove the odour is to sprinkle it with salt. Sprinkle salt on the raw salmon and leave it for 10 minutes, then rinse it off and blot it dry with kitchen paper. This step makes the raw salmon much tastier.

1. thaw frozen fish.

2. Heat oil in a frying pan and cook skin side down over high heat for 5-7 minutes. The skin will be crispy. Do not forget to cover the pan.

3. when the skin is golden brown or browned, turn over and steam with 25 cc of water to ensure the inside is cooked thoroughly.

Be careful not to add water as it will cause the oil to splatter. The temperature of the fire can be lowered and the pan can be removed from the heat at once. As soon as the water is added, cover the pan with a lid to prevent oil splashing around.

4. when the back side is cooked [after about 3 minutes of cooking], the dish is ready.


魚(さかな)の焼(や)き方(ほう)材料(ざいりょう)

・塩鮭(しおざけ)……1切(き)れ
・ サラダ油(あぶら)……小(ちい)さじ 1/2杯(はい)程度(ていど)


下(さ)ごしらえ
生鮭(なまじゃけ)はそのまま使(つか)うのではなく、臭(しゅう)み を取(と)ってから調理(ちょうり)すること を おすすめします。
臭(しゅう)み を取(と)る方法(ほうほう)は塩(しお)を ふること。生鮭(なまじゃけ)に塩(しお)を ふって 10分(ふん)ほどおき、洗(あら)い流(なが)したら キッチンペーパー で水気(みずけ)を ふきとります。このひと手間(てま)で、生鮭(なまじゃけ)がぐんとおいしく仕上(しあ)がります。



1.冷凍(れいとう)の魚(さかな)を解凍(かいとう)する。

2.フライパン に油(あぶら)を ひいて、皮(かわ)の部分(ぶぶん)を下(した)にして強火(つよび)で 5-7分(ふん)焼(や)く。皮(かわ)目(め)を パリッ と焼(や)きます。フライパン に蓋(ふた)を するの忘(わす)れないように。



3.皮(かわ)がきつね色(しょく)になる、または焦(こ)げ目(め)がついてきたら、裏返(うらがえ)して中(なか)までしっかり火(ひ)が入(い)るよう 25ccの水(みず)を入(い)れて蒸(む)します。
水(みず)を入(い)れると油(あぶら)がはねるので気(き)をつけましょう。火(ひ)の温度(おんど)を低(ひく)くし、フライパン は一旦(いったん)火(ひ)から下(くだ)ろしてもいいです。水(みず)を入(い)れたらすぐに蓋(ふた)を して、油(あぶら)が周(まわ)りに飛(と)びちらないようにしましょう。



4.裏面(うらめん)に焼(や)き目(め)が付(つ)いたら〈3分(ふん)やいたぐらいで)出来上(できあ)がりです。
