Shio Ramen

Lightly salted ramen

Perfectly clear! The soup is crystal clear.

Vegetable and chicken broth. The soup is more balanced in flavour and salt than it appears.

Although one might expect the soup to be thin and lacking in flavour, this is not the case at all, as the ramen brings out the best of each flavour.


あっさり塩(しお)ラーメン

完全(かんぜん)なる透明(とうめい)!!スープ は透(す)き通(とお)っている。

野菜(やさい)と鶏(とり)ガラベース の スープ。見(み)た目(め)よりちゃんと旨味(うまみ)と

塩味(しおあじ)が バランス よく味(あじ)わえる。

薄(うす)いだろうと、もの足(た)りなさが先(さき)にイメージ されるが全(まった)くそんなこ

となくしっかりそれぞれの旨味(うまみ)を引(ひ)き出(だ)すラーメン。


Ingredients (for 2 servings)

2 balls of Chinese noodles

Hot water (for boiling) as needed

2 chicken strips (or 2 pieces of ham)


600ml hot water for soup

1 tablespoon chicken broth

1 tablespoon white soup stock 

1/2 tablespoon sesame oil

1/2 teaspoon salt

2 boiled eggs

A few sprigs of bamboo shoots (menma)

Small green onion (cut into small pieces), as desired


材料(ざいりょう) ( 2人前(にんまえ))

中華麺(ちゅうかめん) 2玉(たま)

お湯(ゆ)( ゆで用(よう)) 適量(てきりょう)

鶏(とり)ささみ 2本(ほん)(ハム 2枚(まい)でも可(か))


スープ お湯(ゆ) 600ml

鶏(とり)ガラスープ の素(もと) 大(おお)さじ 1

白(しろ)だし      大(おお)さじ 1

ごま油(あぶら)     大(おお)さじ 1/2

塩(しお)       小(こ)さじ 1/2

ゆで卵(たまご)      2個(こ)

めんま 適量(てきりょう)

小(こ)ねぎ (小口(こぐち)切(き)り) 適量(てきりょう)


How to make

1. Boil chicken in boiling water for about 2 minutes until cooked through, then drain off the water. Remove from heat and break into pieces by hand. 

2. Make the soup. Put the soup ingredients into a pot of boiling water and bring to a boil, then remove from heat.

3. Add the Chinese noodles to another pot of boiling water and boil according to the package directions. 

4. Place 2 in a serving bowl, add 3, and top with 1, boiled egg, and small green onions.


*The flavour and intensity of the taste of white dashi varies depending on the type, so please use the amount indicated on the package as a guide and adjust to your taste. Adjust the amount of salt to taste.


作(つく)り方(かた)

1.沸騰(ふっとう)したお湯(ゆ)に鶏(とり)ささみ を入(い)れ、2分(ふん)程(ほど)、中(なか)に火(ひ)が通(とう)るまでゆでたら湯(ゆ)を切(き)ります。粗熱(そねつ)がとれたら手(て)でほぐします。

2. スープ を作(つく)ります。鍋(なべ)の沸騰(ふっとう)したお湯(ゆ)に スープ の材料(ざいりょう)を入(い)れ、ひと煮(に)立(た)ちしたら火(ひ)から下(お)ろします。

3.別(べつ)の沸騰(ふっとう)した鍋(なべ)のお湯(ゆ)に中華麺(ちゅうかめん)を入(い)れ、パッケージ の表記(ひょうき)に従(したが)ってゆで、湯(ゆ)を切(き)ります。

4.器(うつわ)に 2 を盛(も)り付(づ)け、3 を入(い)れます。1(とりささみ)、ゆで卵(たまご)、小(こ)ねぎ を トッピング したら完成(かんせい)です。



*白(しろ)だしは種類(しゅるい)によって風味(ふうみ)や味(あじ)の濃(こ)さが異(こと)なるので、パッケージ に記載(きさい)されている分量(ぶんりょう)を目安(めやす)にし、お好(この)みに合(あ)わせてご使用(しよう)ください。塩(しお)加減(かげん)は、お好(この)みで調整(ちょうせい)してください。



Sapporo Shio Ramen

It features a delicious hot soup with bean sprouts stir-fried in vegetable flavoured oil. The rich flavour of the chicken stock-based broth mixed with the clear pork bone broth is a salt ramen that can only be found in Hokkaido.

Ingredients (for 2 servings)

2 balls of Chinese noodles

中華麺(ちゅうかめん) 2玉(たま)

お湯(ゆ)( ゆで用(よう)) 適量(てきりょう)

スープ お湯(ゆ) 900ml

野菜(やさい)香味(こうみ)油(あぶら)

How to make

1. Boil the noodles in plenty of water.

2. Add 5 ml of vegetable oil to a wok and stir-fry bean sprouts, then add 360 ml of clear soup stock and 36 ml of salty ramen broth and bring to a boil.

3. Put the cooked noodles into a bowl.

4. Pour the soup into the bowl and garnish with the ingredients.


作(つく)り方(かた)

1. たっぷりのお湯(ゆ)で麺(めん)を茹(ゆ)でます。

2.中華鍋(ちゅうかなべ)に野菜(やさい)香味(こうみ)油(あぶら)5ml を入(い)れてもやし を

炒(いた)め、清(ちん)湯(たん)ガラスープ 360ml と ガラ味(あじ)塩(しお)ラーメン

スープ 36ml を入(い)れ、ひと煮(に)立(た)ちさせます。

3.茹(ゆ)で上(あ)がった麺(めん)を丼(どんぶり)に入(い)れます。

4.丼(どんぶり)に スープ を入(い)れ、具(ぐ)材(ざい)を盛(も)り付(つ)けます。



※ガラスープ は「本格(ほんかく)仕込(しこ)みガラスープ湯(ゆ)」の 5倍(ばい)希釈(きしゃく)がおすすめです。
