Glutinous rice

Difference between glutinous rice and ordinary rice (Uruchi rice)

Ordinary rice that is usually eaten as rice is called "Uruchi rice". On the other hand, "glutinous rice" is rice used for rice cakes, red rice"Oseki-han", etc. Compared to glutinous rice, which is translucent, glutinous rice is white and opaque and looks different, but the big difference is starch. It is in the ingredients.

The starch component of ordinary rice is about 2: 8 of amylose and amylopectin, whereas "glutinous rice" is only amylopectin and does not contain amylose. This amylopectin is the source of the stickiness of tmochi.

Countries that have a habit of eating "glutinous rice" are widely distributed in Southeast Asia and East Asia. In Japan, it has been customary to eat "glutinous rice" for a long time, and you can enjoy it in various forms such as red rice "Sekihan", rice cakes for New Year's, rice dumplings, and snack.

How to beat mochi using a pestle and a mortar

[The day before beat mochi]

Prepare glutinous rice, sharpen the glutinous rice the night before, and soak it in plenty of water.

From the day before, fill the mortar with water, put the pestle in a bucket, and soak it in water.

Tanabata- constellation in July

Tanabana

7月

What is Tanabata?

Tanabata is a star festival that was introduced from China to Japan long time ago. The festival began with the legend of Hikoboshi and Orihime, a male and female star, faceing each other across the Milky Way. These two stars could meet only once a year on July the 7th.

https://omatsurijapan.com/blog/tanabata-family/

Looking up at the eastern sky around 8 o'clock on a summer night, you can see three bright stars. Connecting these stars with a line creates a large triangle, called the "Summer Triangle". (Omitted) Vega represents the Orihime and Altair represents the Hikoboshi. The Tanabata tradition began with these stars being most easily seen around July 7.

Why do you make "Sasakazari" during Tanabata?

People used to offer vegetable and fruit during the festival to "Orihime-sama" in order to become as good at weaving as Ori hime-sama, and for thier wishes to come true. Later they began to write the wishes on five different coloured paper strips called "Sasakazari"on bamboo (each has different meaning) .

The strip of paper with five colours

Now days, during Tanabata, strips of wishes and origami decorations are hung on the bamboo, and after the festival the bamboo is poured into the river. The color of the strip is determined by the type of wish.

Red: A color that represents "decision", is ment for family and ancestors.

Blue: It is the color of "silence" and "trust" it is used for improving your habits for better and to gain the respect.

Yellow: Is the color of "success", which is used to improve your personal friendships and relationships.

White: A color that represents responsibility and obligation is used to improve work relationships.

Black, Purple: Colors that represent education and wisdom, and are used to wish for more "energy" and "power."

There are various decorations for Tanabata besides Tanzaku strips.

1. Fatigue recovery

Soy lecithin has a fatigue recovery function. It also helps the brain work and relieves stress, so it also helps with mental fatigue. Similarly, soybeans have a lot of vitamin B1 that is good for fatigue relief.

2. Make your skin beautiful

Potassium contained in soybeans helps skin cells function normally by improving their metabolism, and promoting skin regeneration. Vitamin E also has the effect of removing active oxygen that ages the skin. In addition, the sticky ingredient also promotes skin regeneration.

3. Improves immunity

Fermentation transforms isoflavones into a molecule called aglycone. Aglycone has the power to boost immunity. The ideal intake is 70 to 75 mg a day, therefore, you should eat 1 pack (about 50 g) of natto a day. In addition, dipicolinic acid produced by fermentation has strong antibacterial and antiviral effects.

4. Keeps the intestinal environment in good condition

Bacillus natto, which is the source of fermentation, reaches the intestines alive and is said to create an environment in which bad bacteria do not easily grow. By the way, 10 billion natto bacteria live in 10 g of natto. In addition, the water-soluble and insoluble dietary fibre of soybeans stimulates the intestinal wall, increases the number of good bacteria, and improves bowel movements.

5. To lose weight in a healthy way

Zinc contained in soybeans has the ability to absorb ingested sugar into muscle cells, making it easier to energize, and the ability to make sugar less likely to become triglyceride. In addition, soy fibre absorbs cholesterol in the intestines, wraps up excess sugar, and helps excrete it from the body.

6. Prevention of hypertension and blood clots

Soybean saponins suppress the production of lipid peroxides, which are the source of blood clots. Taking saponin can prevent arteriosclerosis. Furthermore, it can be expected to reduce blood cholesterol and triglyceride. In addition, potassium has the effect of excreting sodium and lowering blood pressure.

7.Bones get well

Protein is essential for the absorption of calcium, which strengthens bones. Soybeans contain 18 of the amino acids that make up protein, so when taken, the absorption rate of calcium increases. Vitamin K2 produced by fermentation has the effect of adsorbing calcium to bones.

8.  Anti-Aging

The power of isoflavones is great for anti-aging. Since it has the same structure as the female hormone estrogen, it acts in place of the hormone when the female hormone decreases. Not only that, it also has the effect of helping proteins increase sex hormones.

How to Make Natto

Ingredients

Dried soybeans

Bacillus natto (fermented soybeans)

How to make

作り方

Soak the dried soybeans in plenty of water overnight (24 hours).

When rehydrating soybeans in water, add a pinch of salt to make them glossy again.

Simmer the soybeans in a pot. (Pressure cooker for 25-30 minutes.) Add a pinch of salt to prevent burning. When the soybeans are soft enough to crush with your fingers, they are ready.

It tastes better when made with steamed soybeans. The flavour of the soybeans will be richer and the consistency will be the strongest natto you have ever made. When the soybeans are soft enough to crush with your fingers, they are ready.

Put the based natto into a small bowl, pour 4-5 tablespoons of boiling water over them, and stir with a spoon.

Mix it quickly until it becomes fragrant and thick. This is the soup full of natto bacteria.

Drain the boiled water from the soybeans in a colander, put it in a bowl, pour the natto bacillus soup from step 3 over it, and stir to distribute it all over. Natto bacillus is activated by heat, so both should be done while hot.

Put 6 into a rice cooker. Or leave it in a warm place for 24h. If there is a lot of water and the beans get soaked, drain the water. Cover with a tightly squeezed Japanese hand towel to allow the fungus to breathe, and keep warm with the lid open for about half a day.

The rule of thumb is that when you stir the soybeans, there should be no water on the bottom.

Do not allow the rice cooker to get too hot while keeping the rice warm. Turn the rice cooker on and off repeatedly for about 3 hours, and turn it on again when it cools down.

3 ☆Addendum 3

It seems that if the soybeans overlap too much, the natto bacillus will suffocate. I think it depends on the size of your rice cooker, but I use a 3 cup size and turn the top and bottom over halfway through.

When the beans are covered with a white film, they are ready to eat! They are not very sticky at this point. At this point, the beans are still not very sticky. Transfer them to a storage container, cover with a towel, and let them sit in the refrigerator for another day or two.

When the beans become more wrinkled and sticky, they are ready to serve. Add your favorite spices and enjoy.

When fermented in the refrigerator, the based natto grains may turn black.

There is no problem if you remove them, but if you are concerned about this, please follow step 5 to remove the grains and use only the liquid.

How to spend Obon?

In Obon, there is a ritual to allow the spirit of our ancestors to return from the other world and return safely. First of all, we will ignite a fire on the "Meeting Bon Festival" (13th), which welcomes the spirits of our ancestors. This is used as a mark to prevent the ancestors' ghosts from getting lost, and in the evening, the peeled hemp "Ogara" is roasted at the front door (HOUROKU: unglazed flat plate or clay pot). Burn on. (please see picture below)

In addition, when sending out, we will ignite a sending fire in the "feeding tray" (16th). The time zone and method are the same as for the fire, but the meaning is to forgo returning to the other world.

The 14th and 15th, which are the "Nakabi", are the periods when the spirits of our ancestors spend their time at home, and some people hold memorial services such and visit the grave. There is no such exact timing, but it is customary to go on the 13th "Mukae (welcoming) bon".

https://www.astas.co.jp/obon-vacation/

As for offerings and fresh flowers, it is a good idea to offer what the deceased loved during his lifetime. Roasting is mainly sold at Buddhist altar stores, but you can easily get Ogara and offerings as a tray set at supermarkets and online stores. Make sure to prepare all of them by the day before the Bon Festival. If you invite a certain number of attendees to perform the Obon festival, consult with a temple or funeral company at least 3 months in advance.

Meaning of spirit horses of "eggplant" and "cucumber"
The spirit horse is said to have been made as a vehicle to come and go during the Obon festival when the spirits of the deceased and ancestors return home.
A fast-paced "cucumber horse" with the wish that "ancestors should arrive at the house as soon as possible", and a slow-walking "eggplant cow" with the wish that "I want you to stay in this world for as long as possible" "Decorate. Cows are also thought to have been chosen to make it easier for them to bring back offerings to memorialize their ancestors.
In other words, the spirit horse is a vehicle made with the meaning that ancestors can spend as much time as possible in this world. By hand-crafting with all your heart, you will be more thankful to your ancestors.

Why decorate the tray with physalis?
・ Lantern as a guidepost for the deceased
Hozuki is now displayed on the tray as a lantern in the natural world.
The lanterns on the tray serve as a guide for the deceased to return from the afterlife.

・ The soul dwells in the cavity of the demon lantern
The ancestors who return to Obon have no substance. Therefore, it is said that they spend their time in a place where the inside is hollow.
Physalis alkekengi is like a small hotel where the deceased can take a rest.

Obon is an important event in which the souls of our ancestors return from this world to this world only once a year. Most people have the Obon holiday from August 13th to 16th, but there are some areas where it is held in July.

I think you've seen the Obon festival and "Toro nagashi" on TV programs and news.

On a summer night, the fantastic and beautiful scenery of the lights floating on the river is a world where you can feel the unique atmosphere of Japan.

Toro nagashi is a traditional Japanese event that mourns the souls of the dead and throws lanterns and Obon offerings into the sea and rivers.

In general, Toro nagashi is a type of bonfire that is performed during the Obon festival.

Okuribi is an event to burn the spirits of the dead who returned from the other world to this world (this world) at the beginning of the Obon festival to send them to the other world (paradise pure land) at the end of the Obon festival.

At the end of the Obon festival, there is an area that lights a bonfire as a guide so that the spirits of the dead do not get lost on the way to the afterlife.

Toro nagashi is one of the bonfires.

Raining season - Tsuyu, June

Click !! you can buy Japanese umbrella from Japan

Jun season called "BAIU" or "TSUYU". Seasonal rainfall that is particularly noticeable from June to July from the Yangtze River basin in China to the southern part of Japan. Depending on the year, the period varies, and the dates of the rainy season and the end of the rainy season are not fixed.

The end of the rainy season is usually around mid-July on the southern coast of Japan and late July in the Tohoku region. In Hokkaido, there are years when the rainy season appears clearly and years when it does not. From a meteorological point of view, the Baiu phenomenon corresponds to the stagnation of the Baiu front along the south coast. The Baiu front zone usually appears in the latitude zone connecting Taiwan and Iwo Jima around May, and moves northward seasonally while moving up and down, and moves northward to Primorskaya Oblast in midsummer. Therefore, the rainy season begins earlier in the south and ends earlier. The rainy season in Okinawa is called "summer season". May is the peak of the rainy season in Ogasawara.

The term "rainy season" is used because the rainy season begins when the ume fruits are ripe, and at this time, the humidity is high and mold grows easily. It is said that it became. Recently, Japan has been astounded by unpredictable stormy weather and seems to be showing off the horror of natural disasters.

KOINOBORI

Since ancient times, the Tango no Sekku has been celebrating the growth of boys and praying for their success. Today, it is a national holiday called Children's Day. The appearance and shape of carps has not changed.

"Koi" in Japanese culture is an animal that brings luck. Why is it a carp and why shouldn't it be another fish? Since ancient times, carp have been treated as auspicious creatures with strong vitality. Compared to other fish, carp has the power to survive not only in clean water but also in dirty swamps and ponds.

In China, there is a tradition of "climbing a carp waterfall," while it was belived that "a carp climbs a violently flowing waterfall, becomes a dragon, and rises to heaven," therefore carp was regarded as a symbol of  vitality.

The love of parents, "May my beloved child advance as strongly as a carp," is firmly expressed and passed on to the next generation.

Meaning of "carp color"

First of all, there are three common colors of carps: black, red, and blue. Each colors holds its own meaning.

● Black carp (MAGOI) is the true carp and represents the father.

Black is a color that represents the image of a harsh and cold winter time and the image of water that is an integral part of all living things. The black color representing these two images will match the image of the father, who is the main pillar of the family. In this way, it is said that the custom of expressing Makoi in black has taken root.

● Red carp (HIGOI) is called scarlet carp and represents the mother.

Red is a color that represents summer and fire. Summer is the season when many of the plants and flowers on the earth are exposed to a lot of sunlight that nurtures their lives. The fire is what enabled the humans to build civilizations and aquire knowledge. these two images of warmth represent the mother.  In Japan, scarlet carp gives birth to and raises children, and protects the family while passing on a lot of knowledge to the children. Therefore, the color red has become the color of mothers and women in Japan.

● Blue carp representing a child

Blue is a color that represents spring and trees. Spring is a refreshing season, and many creatures are active freely. The vegetation is also dyed green and grows quickly. Isn't such a figure the perfect color to show the healthy growth of a child? It seems that only black carp was displayed in the Edo period, and only black is drawn in Ukiyo-e. In the Meiji era, red was added, and in the Showa era, blue was added.

Meaning of windsock

The colorful fluttering decoration on top of Makoi is called "windsock". The windsock is decorated to protect against evil spirits. The colors of blue, red, yellow, white, and black are derived from the idea of "gogyosetsu."

According to the Five Elements theory, the whole world is made up of wood, fire, earth, gold, and water, and each of them influences each other. And the colors and the five lines correspond as follows.

Blue = wood

Red = fire

Yellow = soil

White = gold

Black = water

The windsock can be said to be a decoration to pray for amulets by representing the five elements that make up everything in this world.

青=木

赤=火

黄=土

白=金

黒=水

The National Cat Day website states that the holiday was first celebrated in 2005 "to help the public recognize the number of cats that need to be rescued each year. The day was founded by Colleen Paige, a pet and family lifestyle expert, who was supported by the American Society for the Prevention of Cruelty to Animals, which is a nonprofit pet adoption organization.

In Japan, Cat Day is celebrated on February 22, as the date resembles the words "nyan nyan nyan" (meow meow meow).  It is celebrated with people posing with photographs of themselves with their pet cats, resutaurant serve cat-themed cuisine and the businesses selling of pet foods/ goods.
