Menu that appears in OSECHI (New Year dishes)

In Japan, we eat Toshikoshi (year end) soba at the end of the year, and on New Year's Day we have Japanese Sake, Osechi(new years meal), and ozoni (new years soup). Osechi is a celebration set to pray for a good harvest at the beginning of the year. In addition, Sanganichi (date from 1st Jan to 3rd. Jan) Osechi that can be preserved, including the meaning of holiday for housewives from housework. Each of these ingredients for Osechi has a special meaning and is mainly for wishing for good health. Osechi is packed in a special weight, and this weight (lunch box) is original from Japan.

おせちに出(で)てくるメニュー

日本では年末(ねんまつ)に年越(としこ)しそばを食べ、元旦(がんたん)にはお酒(さけ)とおせち、そしてお雑煮(ぞうに)をいただく。おせちとは年の始(はじ)めにその年の豊作(ほうさく)を祈(い)のって食べる祝(いわ)い膳(ぜん)です。また三が日は主婦(しゅふ)を家事(かじ)から解放(かいほう)するという意味(いみ)を含(ふく)め、保存(ほぞん)の効(き)く食材(しょくざい)が中心(ちゅうしん)のものになっています。その食材(しょくざい)一つ一つに特別(とくべつ)な意味(いみ)があり、主(おも)に健康(けんこう)を願(ねが)うためのものです。おせちは特別(とくべつ)なお重(じゅう)に詰(つ)められており、このお重(じゅう)(お弁当箱(べんとうばこ)は、日本独特(どくとく)のものです。

In addition, the eggs used in Datemaki are a symbol of child treasure. For this reason, Datemaki has the meaning of "prosperity of descendants" as well as academic achievement. In addition, the yellow color of the egg means "fertility," which is also reminiscent of a child treasure. In addition, the round shape of the egg indicates that the family will be happy.

The yellow color produced by the eggs is close to gold, giving the viewer a gorgeous impression and creating a luxurious atmosphere, making it a standard osechi dish.


伊達巻(だてまき)をおせちに入れる意味(いみ)

おせち料理(りょうり)には、それぞれ願(ねが)いが込(こ)められていますが、伊達巻(だてまき)は「学業成就(がくぎょうじょうじゅ)」の願(ねが)いが込(こ)められています。なぜ伊達巻(だてまき)が学業成就(がくぎょうじょうじゅ)につながるのかというと、理由(りゆう)はその形(かたち)にあります。

伊達巻(だてまき)は、卵(たまご)や魚(さかな)のすり身(み)を混(ま)ぜて焼(や)いたものを巻(ま)いており、その形(かたち)は巻物(まきもの)に似(に)ています。

巻物(まきもの)は昔(むかし)における書物(しょもつ)であり、勉強(べんきょう)などに用(もち)いられていました。そのため、巻物(まきもの)は知性(ちせい)を象徴(しょうちょう)するものとされており、同(おな)じような形(かたち)の伊達巻(だてまき)に学業成就(がくぎょうじょうじゅ)の願(ねが)いが込(こ)められるようになったのです。

さらに、伊達巻(だてまき)に使(つか)われる卵(たまご)は、子宝(こだから)を象徴(しょうちょう)する食材(しょくざい)です。そのため、伊達巻(だてまき)には学業成就(がくぎょうじょうじゅ)とあわせて「子孫繁栄(しそんはんえい)」の意味(いみ)も込(こ)められています。また、卵(たまご)の黄色(きいろ)には、「豊穣(ほうじょう)」という意味(いみ)があり、こちらも子宝(こだから)を連想(れんそう)させます。さらに、卵(たまご)の丸(まる)い形(かたち)は、家庭(かぞく)が円満(えんまん)になることを表(あらわ)しています。

卵(たまご)によって作(つく)り出(だ)される黄色(きいろ)は金色(きんいろ)にも近(ちか)く、見る人に華(はな)やかな印象(いんしょう)を与(あた)え、豪華(ごうか)さを演出(えんしゅつ)することができるため定番(ていばん)のおせちの一品(いっぴん)です。


Ingredients 伊達巻(だてまき)の材料(ざいりょう)

Tofu               豆腐              60g

Egg                 卵           4個

Gardenia        クチナシ     半分 half         

Water                水            20g

Solt                   塩            1g

Soya                醤油          5g

Maple syrup  メープルシロップ       大さじ1 big spoon 1


How to make      作り方

5.中火(ちゅうび)にかける

卵焼(たまごや)き器(き)に油(あぶら)を引(ひ)き、4の半量(はんりょう)を入れ、弱(よ)い中火(ちゅうび)にかける。


6.卵液(たまごえき)の半量(はんりょう)を入(い)れる

5が固(かた)まってきたら、3の卵液(たまごえき)の半分(はんぶん)を入れる。


7.ふたをのせ、卵(たまご)が固(かた)まるまで焼(や)く

少(すこ)しめくってみて、焼(やき)き色(いろ)がついていれば、卵(たまご)を巻(ま)く。


8.卵(たまご)を手前(てまえ)に巻(ま)いてゆく


9.巻(ま)き終(お)わったら奥(おく)に卵(たまご)を移動(いどう)する

4のメープルシロップ入りの卵液(たまごえき)を入れ、固(かた)まってきたらさらに3の卵液(たまごえき)の残(のこ)りを入れふたをする。


10.卵液(たまごえき)が固(かた)まったら、手前(てまえ)に巻(ま)く。


11.巻(ま)き終(お)わったらすだれの上(うえ)にのせて巻(ま)く。

両端(りょうたん)を輪(わ)ゴムで止(と)めて、冷(さ)ます。


12.冷(さ)めたら、取(と)り出(だ)して、食(た)べやすい大きさに切(き)る。

おせち料理(りょうり)に黒豆(くろまめ)が入っているのは、「まめ」に働(はたら)く、「まめ」に暮(く)らすなどの意味(いみ)があるからです。

The overall flow is as follows. It takes a couple of days to make it, but the actual work is very easy.

全体(ぜんたい)の流(なが)れは下記(かき)の通(とお)り。2~3日かけて作(つく)りますが、実際(じっさい)の作業(さぎょう)はとても簡単(かんたん)です。

・ Make syrup, simmer for 10 minutes and cool (3-4 times)

【Third day】【3日目】

・ If possible, simmer in syrup for 10 minutes and cool (2 to 3 times).

・しょうゆを加(くわ)えて仕上(しあ)げる

2日目で完成(かんせい)にしてもOKですが、3日目の作業(さぎょう)をプラスするとよりおいしくなります。お正月(しょうがつ)に食(た)べるなら12月29日か30日に作(つく)り始(はじ)めましょう。

  Reduced iron ... 1 teaspoon

* Boil in an iron pot, or use a commercially available iron ball or rust nail instead. If you don't care about the color, you don't have to.

Baking soda ... 1 teaspoon

Salt ... 1 teaspoon

重曹(じゅうそう)…小さじ1

塩(しお)…小さじ1



2.<Syrup>

Water ... 1,000 ml

Yellow sugar... 300g

※好(こ)のみの砂糖(さとう)で代用可(だいようか)。黄ザラメと比(くら)べて、白ザラメはよりすっきり、上白糖(じょうはくとう)はよりしっかり、キビ砂糖(さとう)など精製度(せいせいど)の低(ひく)い砂糖(さとう)はよりコクのある甘(あま)みになる


3.<For finishing>

<仕上げ用(しあげよう)>

しょうゆ…大さじ1


How to make it

2. Boil the beans for 3-4 hours until they are tender.

「グラグラと沸騰(ふっとう)させると豆(まめ)がおどって皮(かわ)が破(やぶ)けるので、火加減(ひかげん)には気(き)をつけて。常(つね)に煮汁(にじる)が豆(まめ)よりも上(うえ)になるよう、湯(ゆ)を加(くわ)えて調整(ちょうせい)します。ここで水を加(くわえ)えるのはNG。急激(きゅうげき)な温度差(おんどさ)が起(お)こり豆(まめ)の皮(かわ)が破(やぶけ)けやすくなります」


3.3 After boiling for 3 hours, check the softness of the black soybeans once.

Pinch the black beans with your thumb and pointer, and if you can crush them without using force, you can finish. Turn off the fire. If you haven't boiled it yet, boil it until it becomes soft.

4. Make syrup while boiling beans

Make syrup shortly before the black soybeans are boiled. Put 1,000 ml of water and 300 g of yellow sardine (sugar of your choice can be used as a substitute) in another pan and heat over medium heat. When the sugar melts, turn off the heat.

4.豆(まめ)を煮(に)ているあいだにシロップを作(つく)る

黒豆(くろまめ)の下(した)ゆでが終(お)わる少(すこ)し前(まえ)のタイミングで、シロップを作(つく)る。別(べつ)の鍋(なべ)に水(みず)1,000ml、黄(きいろ)ザラメ(好(こ)みの砂糖(さとう)で代用可(だいようか)300gを入れて中火(ちゅうび)にかけ、砂糖(さとう)が溶(と)けたら火(ひ)を止(と)める。


5. Discard the broth, wash away the reduced iron and baking soda, and spill once.

Move the pot to the sink and pour water little by little from the pot skin to remove the rough heat. Gently transfer the black beans together with the water to a bowl of colanders. Wash the pot clean. If an iron ball is used as a substitute for reduced iron, it is taken out at this timing.

5.煮汁(にじる)を捨(す)てて還元鉄(かんげんてつ)と重曹(じゅうそう)を洗(あら)い流(なが)し、一度(いちど)ゆでこぼす

鍋(なべ)を流(ながし)しに移動(いどう)し、鍋肌(なべはだ)から水(みず)を少(すこ)しずつ注(そそぎ)ぎ粗熱(あらねつ)をとる。ザルを重(かさ)ねたボウルに黒豆(くろまめ)を水(みず)ごとそっと移(うつ)す。鍋(なべ)はきれいに洗(あら)っておく。還元鉄(かんげんてつ)の代用(だいよう)で鉄玉(てつだま)を使用(しよう)した場合(ばあい)、このタイミングで取(と)り出(だ)す。

ザルを上(あ)げてボウルの水(みず)を捨(す)て、ボウルの端(はじ)から水(みず)を注(そそ)ぎ、ザルを上下(じょうげ)に静(しず)かにゆらして洗(あら)う。ボウルの底(そこ)に還元鉄(かんげんてつ)が残(のこ)らなくなるまで、5~6回(かい)繰(く)り返(かえ)して洗(あら)う。

Ingredients (3 servings)

200g sweet potato

Water (to soak), to taste

3 chestnuts, sweetened

1 poppy seed

Moderate amount of water

50g sugar

(A)2 tablespoons mirin

(A) 1 tablespoon honey

How to make?

Peel sweet potatoes, cut into 3cm slices, and soak in water for 10 minutes. 2.

Put the kuchinashi nuts in a tea pack and pound them with a rolling pin. 3.

Put water and drained sweet potatoes in a pot and simmer over medium heat. When the sweet potatoes are tender, drain the water and remove the tea packets containing the gardenia seeds. 4.

Add the sugar, mash the sweet potatoes with a wooden spoon, stir over low heat, and remove from heat.

Add (A) and heat over low heat while kneading.

Add the sweetened chestnuts and stir to combine.

Spread the mixture on a bat and remove from the heat. Arrange on a plate and top with the sweetened chestnuts.

4. 砂糖(さとう)を入れ、さつまいもを木べらでつぶし、弱火(よわび)のまま混(ま)ぜ合(あ)わせ、火(ひ)から下(お)ろします。

5. (A)を入れて、練(ね)りながら弱火(よわび)で熱(ねっ)します。

6. 栗(くり)の甘露煮(かんろに)を入れて、混(まぜ)ぜ合(あ)わせます。

7. バットに広(ひろ)げて粗熱(あらねつ)を取(と)ります。お皿(さら)に盛(も)り付(つ)け、トッピング用(よう)の栗(くり)の甘露煮(かんろに)をのせて完成(かんせい)です。

How to Make Shrimp with Luster

1 cup soup stock

How to make

Wash the prawns well under running water, and boil all the seasonings together in a pot.

Put the prawns in the pot and shape them with chopsticks so that they look like a hiragana "tsu".

When the color of the prawns changes, cover with a drop-lid and simmer over high-low heat for about 5 minutes, then remove from heat.

海老(えび)はできれば生(い)きている状態(じょうたい)のものを使(つか)うことをオススメします。色鮮(いろあざ)やかな仕上(しあ)がりになります。鮮魚店(せいぎょてん)を覗(のぞ)いてみてくださいね。

 げんごう



What is the era name?

The era name is the name given to the year, and is also called the "Japanese calendar" or "year".

The era name began to be used in China more than 2000 years ago, and it was given a good name to pray for the peace of the country, and it was the most (more) great in the country. It was given a name that meant that the emperor (Kotei) would appeal his power.

That culture was transmitted, and the era name came to be used in Japan as well. Now, when the emperor takes the throne, it is a rule to renew the era name together.


元号(げんごう)ってなに?

元号(ねんごう)というのは年につける名前のことで、「和暦(われき)」や「年号(げんごう)」とよばれている。

元号(げんごう)は今から2000年以上(いじょう)も前、中国(ちゅうごく)で使(つか)われ始(はじ)めたもので、国(くに)の平和(へいわ)を祈 (いの) って縁起(えんぎ)のいい名前をつけたり、国で最も(もっと)も偉(えら)い皇帝(こうてい)が自分の力をアピールする意味(いみ)をこめた名前などがつけられていた。

その文化(ぶんか)が伝(つた)わって、日本でも元号(げんごう)が使(つか)われるようになった。今は天皇(てんのう)が即位(そくい)するときに、いっしょに元号(げんごう)も新しいものにする決(き)まりになっている。

大化のあと、しばらくの間は元号が使われたり使われなかったりする時期があったけど、701年に「大宝(たいほう)」という元号が付けられたタイミングで、元号を付ける制度が定められた。

大宝以降(いこう)は現在に至(いた)るまで、ずっと元号が使われている。

 先月(せんげつ)、調査研究機関(ちょうさけんきゅうきかん)GLOBSEC社(しゃ)は台湾(たいわん)のウー外相(がいそう)をスロバキアに招待(しょうたい)した。私(わたし)たちは台湾(たいわん)の外交部(がいこうぶ)と非常(ひじょう)に良好(りょうこう)な関係(かんけい)を保(たも)っており、この招待(しょうたい)もスロバキア政府(せいふ)の同意(どうい)に基(もと)づいています。

スロバキアのコルチョク外相(がいそう)は、GLOBSECのような非政府組織(ひせいふそしき)は「一つの中国(ちゅうごく)」の原則(げんそく)に従(したが)う必要(ひつよう)はないと考(かんが)えていますが、スロバキア政府(せいふ)はそのような原則(げんそく)を受(う)け入(い)れているため、台湾(たいわん)を独立国(どくりつこく)として認(みと)めることはできません。

最近(さいきん)、欧州議会(おうしゅうぎかい)の文書(ぶんしょ)で認(みと)められるように、EUの多(おお)くの国(くに)が台湾(たいわん)に接近(せっきん)しています。その理由(りゆう)の一つは、最近(さいきん)、「民主主義(みんしゅしゅぎ)」と「権威主義(けんいしゅぎ)」の競争(きょうそう)が世界(せかい)で続(つづ)いており、ヨーロッパの観点(かんてん)からは、中国(ちゅうごく)が「競争相手(きょうそうあいて)」の代表(だいひょう)、台湾(たいわん)が「民主主義(みんしゅしゅぎ)の同盟国(どうめいこく)」であるためです。 中国(ちゅうごく)政府(せいふ)は西洋式(せいようしき)の民主主義(みんしゅしゅぎ)は彼(かれ)らの伝統的(でんとうてき)な中国(ちゅうごく)文化(ぶんか)と一致(いっち)しないことを強調(きょうちょう)していますが、一方(いっぽう)で台湾(たいわん)がそのような民主主義(みんしゅしゅぎ)を採用(さいよう)しているという事実(じじつ)は、そのような論理(ろんり)を明(あき)らかに反証(はんしょう)しています。

確(たし)かに、EU諸国間(しょこくかん)でアプローチの違(ちが)いがあります。たとえば、ドイツは、経済的利益から、中国との関係を完全に最悪にすることを望んでいません。しかし、彼らの新しい与党の1つである緑の党は、中国の反発に関係なく、ドイツは台湾との外交関係を進めるべきであるという明確な立場を持っています。

EU諸国の大半の政府は、政府が民間レベルもしくは議会などの台湾との関係を規制することは自身の民主主義への信頼をなくすと考えています。よって議会レベルの交流は進められるでしょう。

EUとEU諸国は、彼らの軍事力によって台湾を守ることは不可能であると考えています。しかし同時に、彼らは、台湾に対する中国の軍事攻撃がEUと中国の関係に深刻な悪影響を与えることを繰り返し彼らに伝えることによって、彼らが中国に影響を与える可能性があると考えています。

It was we, GLOBSEC, that invited Taiwanese Foreign Minister Wu to Slovakia last month. We have kept very good relationship with Taiwanese ministry of Foreign Affairs, and this invitation is also based on Slovakian Government's interest.
Slovakian Foreign Minister Korcok considers that non-governmental organization such as GLOBSEC does not have to follow the principle of "One China", although Slovakian Government accept such principle thus can not recognize Taiwan as independent country.
Recently, as you can acknowledge through several documents in European Parliament, many countries in EU is approaching to Taiwan. One of the reason is that recently the competition between "Democracy" and "Authoritarianism" is ongoing in the world, and from the viewpoint of Europe, China is regarded as the representative of "Competitors", while Taiwan as "Alliance member of Democracy". Chinese government is emphasizing that Western style of democracy does not match to their traditional Chinese culture, but the fact that Taiwan is adopting such democracy clearly disproves such logic.
Indeed there are differences of approach among EU nations. For example, Germany does not want to make the relationship with China completely to the worst due to the economic merit they are currently enjoying. But one of their new ruling parties, Green Party, has clear stance that Germany should proceed to diplomatic relationship with Taiwan irrespective of Continental China's resentment.
Many governments of EU nations consider that it should jeopardize people's confidence towards themselves if they try to order their Congress, Political parties, and NGO not to approach or expand the relationship with Taiwan. Under such context the relationship should get tighter.

How Japanese cerebrate Christmas?

日本のクリスマスはどうやってお祝(いわ)いしているのでしょう?

If this year is your first Christmas in Japan, you might be a little surprised (or even confused) at some of the traditions you witness. Even though only about 1 percent of the Japanese population are Christian, Christmas is still a pretty big deal over here (as you may have noticed with the plethora of Christmas markets and stunning illuminations dotting every corner of Tokyo). But the Japanese have their own spin on Christmas that doesn’t include any religious affiliations.

もしあなたにとって今年(ことし)が日本での初(はじ)めてのクリスマスであるなら、あなたはちょっと驚(おどろ)くかもしれません(ひょっとしたら混乱(こんらん)するかもしれません)。 実(じつ)は日本の人口(じんこう)のうち、キリスト教(きょう)を信仰(しんこう)する人は約(やく)1%しかいません。しかし、ここではクリスマスはかなり大きなイベントです。(東京のいたるところにたくさんのクリスマスマーケットと見事(みごと)なイルミネーションが、かざられていることにすでにお気(き)づきかもしれませんが。 しかし、日本人はクリスマスに独自(どくじ)の習慣(しゅうかん)を持(も)っており、そこに宗教的(しゅうきょうてき)な意味(いみ)は、 ほぼ存在(そんざい)しません。


While elsewhere around the world, Christmas dinner usually means a fat roast turkey or a nice holiday ham, in Japan it’s all about the Colonel. When the first KFC opened in Japan in 1970, the store manager Takeshi Okawara (who would later go on to become the CEO of KFC Japan) had a sudden flash of inspiration during his sleep one night (as the story goes) – a Christmas ‘party barrel’. At that time, Christmas dinner in Japan was sort of ill-defined, and turkey was (and still is) extremely hard to come by. The idea went over like gangbusters and today an estimated 3.6 million Japanese families will sit down to a hearty feast of KFC on Christmas Day. The ‘party barrels’ have been redesigned as ‘Christmas dinner packages’ (much classier), and every year these holiday sets make up a whopping one-third (!) of KFC Japan’s annual sales. If you’re thinking about joining in the tradition this year, just be warned: this is no joke. If you want ‘Kentucky for Christmas’ you better order your package weeks in advance, or be prepared to queue up for hours at your local KFC.

After Japan’s defeat in World War II, the economy was ravaged and the population was struggling immensely. Food was scarce and sugary sweets especially were an untasted luxury for most. The American Occupation forces led the effort to rebuild Japan, and the sweets they would sometimes hand out seemed like a little window into future splendour and prosperity. As the concept of Christmas gradually crept in during those post-war years, the economy also rebounded with almost unfathomable success. With its previously-unattainable ingredients now available everywhere, the Christmas cake became a symbol that Japan had finally ‘made it’.

The Japanese language has various types of honorific expressions. Honorifics are expressions of respect for superiors, and are used when you want to "honor the other party. Familiar expressions include "sensei," "kisha," " irassharu," and "~nasaru"


日本語は敬語(けいご)の種類(しゅるい)もさまざま。 【尊敬語(そんけいご)】は目上(めうえ)の人を敬(うやま)う表現(ひょうげん)で「相手(あいて)を立てたいとき」に使(つか)うものです。 身近(みじか)なところでは「先生」「貴社(きしゃ)」、「いらっしゃる」「~~なさる」といった表現(ひょうげん)があります。

The word "kenjogo" (humble) is an expression of humility and is used when you want to "stand up to the other person by lowering yourself". Both verbs and nouns contain “kenjogo“, and familiar expressions include "our company," I am","eat "," and "come".


【謙譲語(けんじょうご)】は自分がへりくだる表現(ひょうげん)で「自分を下げることで相手(あいて)を立(た)てたいとき」に使(つか)います。 動詞(どうし)・名詞(めいし)ともに謙譲語(けんじょうご)が存在(そんざい)し、身近(みじか)なところでは「弊社(へいしゃ)」「私(わたくし)」、「いただく」「参(まい)る」といった表現(ひょうげん)があります。

Teineigo (polite language) is a language that expresses respect by using polite expressions toward the other party. It does not stand up to the other person or lower oneself, as in the case of honorific or humble language. Familiar examples of such expressions include "I will eat" and "That is incorrect. There are also expressions that describe things in a beautiful way, such as "osake" and "oryouri". Polite language with "desu, masu" is often used in everyday conversation, regardless of the person you are speaking to.

In Japan, parents and grandparents go to watch the Sports Day. It is a school event where you can see the children running around as energetically as they can at the field day. Parents bring their own lunch to the event. It is a joy for parents and children to enjoy sports together. Parents will cheer their children to do their best.

The end of the school year ceremony is held in March, and in April, there is a change of classes, which resets all previous relationships.

The Shinzenshiki is a traditional Japanese wedding ceremony held in a temple, where the couple makes vows to the Shinto gods. Shinto is a unique Japanese belief that has been handed down from generation to generation through the influence of Buddhism and other beliefs in the eight million gods. It is said to have originated from the celebration of the marriage of Emperor Taisho at Hibiya Grand Shrine (now Tokyo Grand Shrine) in 1903. Based on the idea that the relatives of the couple are bound to each other, the couple reports their marriage to the gods through ceremonies such as "san-san-kudo no hai" (a series of drinking cups to strengthen the bond between the families) and "Tamagushi Hairei" (i.e., offering the couple's hearts to the gods on a Tamagushi). The ceremony is called "Tamagushi-Hairei".

The practice became widespread after the Second World War. Until then, weddings in Japan were held in the groom's home with his relatives gathered in front of a deity enshrined in an alcove.

The way of Worship "Tama-kushi" Step by step

  1. Proceed toward the Shinto priest, bow, and receive the tama-kushi with both hands.
  2. At this time, the branch (root) should be on the right and the leaf on the left. When holding it, wrap the branch from above with your right hand, and support the leaf tip with your left hand.
  3. Hold the skewer at chest height with the tip of the leaf slightly higher than the rest of the branch, and walk in front of the stand where the skewer will be placed.
