What is a Senbazuru?

千羽鶴(せんばづる)とは?

A thousand origami cranes are made by connecting a thousand origami cranes with thread and bundling them, together. It is a kind of wish-granting to pray for the happiness of the recipient, such as recovery from illness or injury, prayers for peace, consolation in times of disaster, and prayers for victory.

折り紙(おりがみ)で折り鶴(おりづる)を千羽(せんば)作(つく)り、それを糸(いと)でつなげて束(たば)ねたものが「千羽鶴(せんばづる)」です。病気(びょうき)や怪我(けが)からの快復(かいふく)・平和(へいわ)への祈(いの)り・災害(さいがい)の慰(なぐさ)め・勝利祈願(しょうりきがん)など、贈(おく)る相手(あいて)の幸福(こうふく)を祈願(きがん)する願掛け(がんかけ)の一種(いっしゅ)です。


The origins of the thousand folded cranes are not known, but in the 1797 book "Hiden Senbazuru Origata" by Yoshimichi Rojian, a series of paper cranes, made by cutting into a sheet of paper and connecting the folded cranes and Secret of the Thousand Cranes were called "Senbazuru". Since ancient times, the crane has been considered an animal of good fortune, signifying longevity and wealth. It was thought that folding many cranes with all one's heart would imbue them with energy and fulfil one's wishes.

How to make gyoza ? Directions

1. Roughly chop chives and cabbage. 

2. Put ground pork and ☆ seasoning in a bowl and mix well until it becomes sticky. 

3. Add chives and cabbage and mix to make a sauce. 

4. Place the bean jam in the center of the gyoza skin, cover the edges with water (not to exceed the amount), and close the skin while making folds. 

5. Place the gyoza in a frying pan with salad oil over medium heat, place the gyoza on the pan, and cook until browned. When the water is gone, pour sesame oil over the dumplings and serve when crispy.


作り方(つくりかた)

1.ニラ、キャベツは粗みじん切りにする。

2.ボウルに豚ひき肉、☆調味料を入れ、粘りが出るまでよく混ぜる。

3.ニラ、キャベツを加えて混ぜ合わせ、あんを作る。

4.餃子の皮の中央に、あんをのせ、ふちに水(分量外)を付け、ひだを作りながら閉じる。

5.フライパンにサラダ油を入れて中火で熱し、餃子を並べ、焼き色がつくまで焼いたら、フライパンの底が浸るまで水を注ぎ、ふたをして、強めの中火で蒸し焼きにする。 水分がなくなったらごま油を回しかけ、パリッとしたら器に盛る。

☆How to wrap gyoza

What is "Respect-for-the-Aged Day"

敬老の日(けいろうのひ)とは   ? 

As you can imagine from the Japanese word "Keirou," the word "Kei" means respect. The word "Rou" means old people. Respect-for-the-Aged Day Holiday, the meaning is "Let's take good care of the elderly. It is a national holiday for the Japanese people. (third Monday in September)

「敬老(けいろう)」という字(じ)から想像(そうぞう)できるように、敬(けい)は、うやまう。老(ろう)は、おとしより、すなわち、「お年寄(おとしよ)りを大切(たいせつ)にしよう」という意味(いみ)が込(こ)められた、日本国民(こくみん)の祝日(しゅくじつ)です。

敬老(けいろう)の日の由来(ゆらい)については諸説(しょせつ)あるようですが、一般的(いっぱんてき)には「としよりの日」が制定(せいてい)されたのがはじまりだと言われています。

(For 5 people)

• Pancake mix  (àCake flour 80g, 20g sugar, 1 teaspoons baking powder, 1/8 teaspoon salt)

• 1/2 egg

• 50 ml of milk

• 10 sausages (without skin)

• A little cake flour

• Appropriate amount of frying oil


材料 (ざいりょう)


- パンケーキミックス

  (ケーキ用(よう)小麦粉(こむぎこ)80g、砂糖(さとう)20g、

   ベーキングパウダー小さじ1、塩(しお)小さじ1/8)


- 卵(たまご)1/2個(こ)


- 牛乳(ぎゅうにゅう)50ml


- ソーセージ(皮(かわ)なし) 10本(ほん)


- 薄力粉(はくりきこ) 少々(しょうしょう)


- 揚げ油 (あげあぶら)適量(てきりょう)



How to make it 


Stick a toothpick into the sausage.



2. Mix the pancake mix, eggs, milk in a bowl, adjusting the amount of flour until it becomes fluffy.


Dip 1 in cake flour, add plenty of liquid in 2 and fry until golden brown while rolling. 


Complete with ketchup and grain mustard.

ソーセージにつまようじを刺(さ)します。


2.ボウルにホットケーキミックス、卵(たまご)、牛乳(ぎゅうにゅう)を入(い)れて、小麦粉(こむぎこ)の量(りょう)を調整(ちょうせい)しながら、ふんわりとなるまで混(ま)ぜる。


1にケーキ用(よう)の粉(こな)をつけ、2の液体(えきたい)にたっぷり入(い)れ、油(あぶら)に入(い)れ、転(ころがし)がしながらキツネ色になるまで揚(あげる)げる。


ケチャップと粒マスタードをかけて完成。

Difference between glutinous rice and ordinary rice (Uruchi rice)

Ordinary rice that is usually eaten as rice is called "Uruchi rice". On the other hand, "glutinous rice" is rice used for rice cakes, red rice"Oseki-han", etc. Compared to glutinous rice, which is translucent, glutinous rice is white and opaque and looks different, but the big difference is starch. It is in the ingredients.

The starch component of ordinary rice is about 2: 8 of amylose and amylopectin, whereas "glutinous rice" is only amylopectin and does not contain amylose. This amylopectin is the source of the stickiness of tmochi.

餅米(もちごめ)と普通(ふつう)の米(こめ=うるち米(まい)の違い(ちがい)

ごはんとして普段(ふつう)食(た)べている普通(ふつう)のお米(こめ)のことを「うるち米(まい)」といいます。これに対(たい)して「もち米(まい)」は、お餅(もち)やお赤飯(せきはん)、おこわなどに使(つか)われるお米(こめ)で、うるち米(まい)が半透明(はんとうめい)なのに比(くら)べて、もち米(ごめ)は白(しろ)く不透明(ふとうめい)で見(み)た目(め)も違(ちが)いますが、大きな違(ちが)いはでんぷんの成分(せいぶん)にあります。

うるち米(まい)のでんぷんの成分(せいぶん)はアミロースとアミロペクチンがおよそ2:8なのに対(たい)して「もち米(ごめ)」は、アミロペクチンのみでアミロースを含(ふく)んでいません。このアミロペクチンがお餅(もち)の粘(ねば)りのもとなのです。

How to beat mochi using a pestle and a mortar

[The day before beat mochi]

Prepare glutinous rice, sharpen the glutinous rice the night before, and soak it in plenty of water.

From the day before, fill the mortar with water, put the pestle in a bucket, and soak it in water.


[On the day]

Drain the glutinous rice. Glutinous rice should be put it in a colander one hour before steaming. 

The place you will use for mochi beat, you put a vinyl sheet under mortar. The mortar need to be fill it with water. Also the pestle in water.

Boil plenty of hot water and put it in a heat-retaining pot.

Steam the glutinous rice in a steamer for 45-60 minutes. The firepower is super high heat, to make the rice soft enough to eat.

10 to 15 minutes before beat mochi, put warm water for mortar and pestle, change the hot water 2-3 times, and to make warm the mortar and pestle sufficiently. When the glutinous rice is steamed, take out hot waterfrom mortar, wipe it lightly, and add the glutinous rice. 

To knead the glutinous rice with a pestle. It's OK if you put your weight on it and the rice grains are roughly crushed. This work is about halfway to get complete moci. Remove the stick from the pestle.

Beat mochi with a pestle. When the mochi becomes sticky, moisten it with hot water. While moistening the hands with lukewarm water, gather the mochi in the center of morter so that mochi will be folds. Ideally, you need 2 people for mochitsuki. one person beat mochi and second person should fold mochi each time.

Lift the whole mochi on the way and turn it over (1-2 times). When the grains are gone and smooth, it's done.


杵(きね)と臼(うす)を使(つか)った餅(もち)のつき方 

【前日(ぜんじつ)】

もち米(ごめ)を用意(ようい)し、前日(ぜんじつ)の晩(ばん)にもち米(ごめ)を研(と)いでたっぷりの水につけておきます。10時間以上(じかんいじょう)水につけます。前日(ぜんじつ)から臼(うす)には水を張(は)り、杵(きね)はバケツなどに入れ水に浸(ひた)しておきます。


【当日(とうじつ)】

もち米(ごめ)を蒸(む)し始(はじ)める1時間前(いちじかんまえ)にざるに揚(あ)げて水気(みずけ)を切(き)ります。

もちつきの場所(ばしょ)にビニールシートなどを敷(し)き、臼(うす)を運(はこ)び、水を張(は)っておきます。杵(きね)も水につけておきます。

お湯(ゆ)をたっぷり沸(わ)かし、保温(ほうおん)ポットに入(い)れておきます。

もち米(ごめ)を蒸(む)し器(き)で45~60分(ふん)蒸(む)します。火力(かりょく)は超強火(ちょうつよび)で。食べてちょうど美味(おい)しいくらいの固(かた)さに。

もちつきの10~15分前(ふんまえ)になったら、臼(うす)、杵(きね)をお湯(ゆ)で温(あたた)め、湯(ゆ)を2~3回(かい)ほど入れ替え(いれかえ)、臼(うす)と杵(きね)を十分(じゅうぶん)に温(あたた)めます。 もち米(ごめ)が蒸(む)し上(あ)がったら、臼(うす)の湯(ゆ)を捨(す)て軽(かる)く拭(ふ)き取(と)り、もち米(ごめ)を入(い)れます。

杵(きね)でもち米(ごめ)をつぶしこねます。体重(たいじゅう)を掛(か)けて米粒(こめつぶ)がだいたいつぶれればOK。この作業(さぎょう)がもちつきの半分くらいです。途中(とちゅう)で杵(きね)に付(つ)いたもちを取(と)ります。

What is Tanabata?

Tanabata is a star festival that was introduced from China to Japan long time ago. The festival began with the legend of Hikoboshi and Orihime, a male and female star, faceing each other across the Milky Way. These two stars could meet only once a year on July the 7th.

Why do you make "Sasakazari" during Tanabata?

納豆菌(なっとうきん)  1/4パック                   Bacillus natto (fermented soybeans)

塩(しお)                                少々(しょうしょう) Solt

作り方


1. 乾燥大豆(かんそうだいず)はたっぷりの水に1晩(ばん)漬(つ)けて(24H)、戻(もど)しておきます。

Soak the dried soybeans in plenty of water overnight (24 hours). 

2. 大豆(だいず)を水で戻(もど)す時(とき)に、塩(しお)を1つまみ入(い)れるとつやつやに戻(もど)ります。

When rehydrating soybeans in water, add a pinch of salt to make them glossy again.

3. 大豆(だいず)を鍋(なべ)でことこと煮(に)ます。(圧力(あつりょく)なべ25分~30分)お塩(しお)をひとつまみいれて、焦(こ)げないように。大豆(だいず)が指(ゆび)でつぶせるくらいの柔(やわ)らかさになったらOKです。

Meaning of spirit horses of "eggplant" and "cucumber"

「なす」と「きゅうり」の精霊馬(せいりょううま)の意味(いみ)
精霊馬(せいりょううま)はお盆(ぼん)の時期(じき)、故人(こじん)やご先祖様(せんぞさま)の霊(れい)が家に戻(もど)ってくる時(とき)、行き来(いきき)する乗り物(のりもの)として作(つく)られたとされています。
 「ご先祖様(せんぞさま)がいち早くお家にたどり着(つ)いて欲(ほ)しい」という願(ねが)いを込(こ)めて足の速(はや)い“きゅうりの馬(うま)”をつくります、「少(すこ)しでも長(なが)くこの世にいてもらいたい」という願(ねが)いを込(こ)めて歩(ある)くのが遅(おそ)い“なすの牛(うし)”を飾(かざ)ります。牛はご先祖様を供養(くよう)するためのお供え物(そなえもの)などを、楽(らく)に持ち帰(もちかえ)ってもらうために選(えら)ばれたとも考(かんが)えられています。
 つまり精霊馬(せいりょううま)は、ご先祖様(せんぞさま)が少(すこ)しでもこの世で過(す)ごす時間(じかん)を多(おおく)くとれるように、という意味(いみ)を込(こ)めて作(つく)られた乗り物(のりもの)なのです。心(こころ)を込(こ)めて手作(てづく)りすることで、ご先祖様(ごせんぞさま)への感謝(かんしゃ)の気持(きも)ちがもっと大きくなります。

・鬼灯(ほおずき)の空洞に魂が宿る
お盆(ぼん)に戻(もど)ってくるご先祖様(せんぞさま)には実体(じったい)がありません。そこで、中が空洞(くうどう)になっている場所(ばしょ)に身(み)を宿(やど)して過(す)ごすと言(い)われております。

送り火というのは、お盆の初めにに、あの世からこちら(現世)へ帰ってきた死者の霊を、お盆の終わりにあの世(極楽浄土)へ送り出すために火を焚く行事のこと。

死者の霊があの世への道で迷うことのないように、お盆の終わりには道しるべとして送り火を灯す地域があります。
